Tabbouleh

Serves: 4 | Preparation: 10 minutes

Ingredients

  • 1 cup cracked wheat (bulgar)
  • 2 large ripe tomatoes, diced
  • 1 small cucumber, diced
  • 3 spring onions, finely sliced
  • 1 cup parsley, chopped
  • 1 cup mint, chopped
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil

Method

  1. Cover the cracked wheat with cold water and soak for 15 minutes
  2. Strain through a sieve and squeeze out excess moisture
  3. Mix with remaining ingredients and serve chilled

Alternatives

  • Make with quinoa rather than cracked wheat (bulgar)
  • Add 425g can drained chickpeas to the recipe
  • Serve with grilled fish or meat
