Ham and Vegie Slice

Serves: 4 | Preparation: 30-40 minutes

Ingredients

  • 6 eggs
  • 60g plain flour
  • 1 cup zucchini, grated
  • 225g can corn kernels, drained
  • 1 cup carrot, grated
  • ¼ cup fresh chives, chopped
  • 100g lean ham, chopped
  • 50g reduced-fat cheese, grated

Method

  1. Preheat oven to 180°C
  2. Beat eggs and then mix in flour
  3. Stir in zucchini, corn, carrot, chives and ham to egg mixture
  4. Pour mixture into a lightly greased baking dish
  5. Top mixture with cheese
  6. Bake for 30-40 until cheese lightly browned

Alternatives

  • Use canned carrots or sliced frozen carrots and zucchini as an alternative to fresh vegetables
